I am no longer trimming this plant (since I don't like to eat it), so I am just watching it spread. It is filling the shelf that normally holds two Harvests. Today is nutrient adding day. I am afraid to see how big it gets once I feed it!

HarvestRemoved a tightly packed half-gallon bag to control growth.
If you are ever in a survival situation, plant purslane if you can srand the mucilagenous leaves! I cut another half gallon bag, crammed full, to control the growth. Still waiting for flowers.

The purslane has decided to grow more compactly since its last trimming. BTW, the pickled purslane stems were superb. Crisp and crunchy. The pickled leaves were pretty awful.

So it was a mixed bag of pickling. At lease you can save and eat the stems.

And the leaves are good in spicy sauces, too. Just yucky raw.

HarvestCollected a second substantial crop.
FinishedPlaced most of the harvest into leftover giardiniera brine.
The purslane is prolific! This is my second harvest! The first picture is after trimming it. The second shows the trimmings. About the taste, it is very mild without the tartness of purslane that grows in soil. I like the taste raw, but I do not like how mucilogenous it is, so I would not eat it in salads. I do like it in spicy sauces, especially in curries. I am refrigerator pickling most of my harvest in leftover giardeniera brine. I will let you know how it tastes in a few days.

HarvestCut sprawling growth and ate the trimmings.
My purslane is sprawling out of the Harvest. My first thought was that I need to repot it. Then it dawned on me -- I can trim it and eat the trimmings at dinner tonight! Funny how you can grow an edible plant and get so caught up in growing it that you forget that you can eat it!

Yes, they were probably purslane. It IS a weed. It is also edible. The wild ones have yellow flowers. And spread like weeds!

Ok then, now I know LOL. I never saw flowers probably because I thought they were weeds and got rid of them LOL... I learn something new each day.

PruningSelected one plant by form and root quality and removed the other three.
HarvestUsed the three removed plants in an Indian curry.
I decided it was time to thin the Harvest to one plant to give it room to sprawl. I did not keep the biggest plant, but the one with the best shape and the biggest root. And I decided not to repot the 3 extras. Instead they are going into a pot of Indian curry tonight!
